How To Choose The Best Pizza Pan

a) Pan Material

Pizza pans are usually made of either stainless steel or cast iron.

i) Stainless Steel

Stainless steel pizza pans are generally a lower maintenance option than cast iron pans. They do however have a tendency to burn your pizza. If it’s your first time making pizza, a stainless steel pan might not be ideal. Stainless steel pizza pans usually do not have any kind of not stick coating on them. ii) Cast Iron

Cast- iron pizza pans require more maintenance than stainless steel pans and must be washed by hand. Many people prefer cast iron pans as the pizza crust always has that deep, rich flavor. Cast iron pans are also extremely durable and can last for a very long period of time. There is the option of getting pre-seasoned pans but you still need to wash them properly and you need to maintain them by seasoning them with oil. Linseed oil is commonly used to season cast iron surfaces. Though they do not have non-stick coating on them, their grooved surface makes it easy to lift off the pizza without any sticking.

iii) Aluminum

Aluminum pans may or may not have non-coating on them. Aluminum can easily get scratched and stained. It is also not dishwasher safe.


b) Types of Pizza Pans

There are six different types of pizza pans and they all have their different features.

i) Deep Dish Pizza Pans

They can easily be identified by their style and looks as they are very different from traditional pizza pans. They have steel sidewalls and come in two pan shapes: square and round. They come in a variety of built material such as aluminum, stainless steel and tin-plated. They are used to make Chicago style pizzas.

ii) Pizza Screens and Disks

These types of pans make the pizzas faster and quicker. They work best with conveyor pizza ovens because they have a mesh-like bottom. Pizza screens have a mesh bottom that allows the heat to be transferred easily through hence allowing the dough to cook faster. This results in a thin-crusted pizza. It is one of a kind as only pizza screens can make this kind of crust.

iii) Pizza Stone

Pizza stones can easily be considered the oldest kind of plates. Big baker ovens used them for a “woody” smell and outdoorsy taste. Pizzas made on these stones have a somewhat exotic taste. The surface of the pans is porous and absorbs the excess moisture from the dough on the stone and gives the pizza a crispy crust as it bakes.

iv) Cast Iron Pizza Pans

A cast-iron pan is a very versatile pan that can be used in the oven, on grills, under the broiler and even on the stovetops. The raised edges bring structure and shape to the pizza crust which makes them a bit heavier than the other pans but also great to bake in.

v) Car Pizza Pan

vi) Regular (Coupe) Pizza Pan

vii) Wide Rim Pizza Pans

Wide rim pizza pans are similar to coupe pizza pans but more inclusive in size. The extra size is used as safety handles. It makes it easier to slice the pizza.


c) Surface of the Pan

i) Perforated Surface

A perforated surface is one that has several holes all over the surface. The holes are meant to help cook the pizza evenly by allowing the heat to directly come in contact with the crust.

ii) Solid Surface

A pizza pan with a solid surface is one that has a smooth even surface that is non-perforated. The pizza pans should be constructed with heavy gauge metals that are powerful conductors of heat. For example steel, cast iron or aluminum.

iii) Fluted Surface

A pizza pan that has a ridged or fluted surface helps in the even distribution of heat. It also makes it easy to release the pizza from the pan once it is baked. The downside of this pan is that it can be hard to clean if any small pieces of food get stuck in between the grooves of the pan.


d) Shape

i) Flat Edge Pizza Pans

A pizza pan that has a completely flat edge with little to no lip can be used as a pizza pan itself or even a pizza peel to slide off your pizza from a hot surface. Flat edge pans are great as they effortlessly release your pizza when you first get it out of the oven. Though convenient for some, it can be dangerous as the pizza can slide off and onto the floor if not careful.

ii) Sloped Edge Pizza Pans
